Chaggis-The Recipe

There’s nothing quite like the feeling of being a pioneer. Such is the case with our new recipe for Chaggis, a contraction of chicken and haggis. We’ve succeeded in creating a delicious steamed pudding-style skinless haggis utilizing chicken hearts, livers and, eat your hearts out (speaking of hearts) permaculture friends, even the lungs! We butchered 13 chickens so we made a recipe based on those quantities, but feel free to experiment. The world of Chaggis is wide open.

1 ½ cups chicken broth
1 onion, finely minced
2 cloves garlic, finely minced
1 bunch parsley, minced

Mix all ingredients together well. While oats soak up the liquids, grease the insides of a pudding mold. Pour the mixture into the mold and place the mold inside a large pot with 2 inches of water in the bottom. Place a lid on the pot and bring to a boil, then lower to a wee gentle boil. Steam 3 hours. Add boiling water if necessary. Remove pudding from pot and allow to cool for half an hour. Remove lid from the pudding mold and place a plate over it. Flip the mold over and the chaggis will land on the plate, ready for you to behold and eat.
